I'm going to guess radios. There was a total of three on offer, base, uplevel, and CD radio; and my car has one obviously.

Rear reading lights. They're two out of three interior light assemblies, and my car only has one because it only has the center dome light.
But why would you need those?!
Or maybe I'm misunderstanding the hints...?
Three of them exist; you bought two; these two were stock on your car; but my car has only one.

So we're looking for something of which your car came stock with a total of three, and my car came stock with a total of one, correct?
The "lighting package" in Lazarus gives it reading lights, for reading maps.
I was going to guess tail lights because I know you discussed an earlier style reflector panel. But I don't think the bird/cougar interchange, so 1997's couldn't be "one".
I think what throws us off is that my car has only one.
I was thinking pedals. But you said those two things were original stock on your car. So my car would have the same number.
Then I was thinking mufflers. Dual vs. single? But then where does the third come from?
Maybe manual climate control unit and message center?
And the third thing would be the radio. And they're all related because they're the same shape.

Soooo, that means you're downgrading back to manual temperature control? You'd still be ahead of me, since I went to no temperature control.
Other thing I can do now is add a toggle switch off the CELO soleboid and use recirculate in other positions besides MAX AC, so that’s an upgrade.

I was actually considering a similar mod: I was going to wire a relay as latching relay into the A/C On circuit. I would be able to turn the mode dial into any position without activating the A/C; pushing a momentary switch would turn it on. Turning it off would be done by turning the dial to any non-A/C position.
I kind of abandoned that idea because A. I didn't want another button in the interior, and B. I figured the A/C will be healthier when it's used more (?), even when it's not necessarily needed. I drive with windows open whenever possible anyway.
